Quick Healthy Breakfasts
When you're a mom, it's typically hard to think of yourself when you have a little loved one who constantly needs attention (and feeding!) So how do you make sure you're staying healthy and fed, while caring for baby?
I struggled with this part when I was first breastfeeding Alayna. I found it hard to prioritize and be able to cook for myself when I was constantly holding her. And then I realized, if I'm hungry then she's not getting the healthy nutrients, nor am I going to be able to produce enough breastmilk to sustain her.
Plus...when I didn't eat breakfast, I was hungry enough and foolish enough to think I could eat anything I wanted even if it were unhealthy because I had the calories right? Wrong!
So I figured out a few quick breakfast ideas for the mom, or working person, who needs to sustain themselves in a quick hurry.
1. Egg Bites
If you've ever been to Starbucks and had their egg bites you'll know it's delicious. But did you know you could probably make something even better tasting at home? All you need is some eggs, chives, bell peppers, salt and pepper, and a muffin tin. Or really, any toppings you enjoy on your eggs chopped and cut up. Crack the eggs into a muffin tin, add in your chopped ingredients, and bake them in the oven until cooked.
Put them in the fridge and eat within 3 days to avoid any spoiled eggs!
2. Instant Oatmeal
If you're in a grave hurry, instant oatmeal is filling and pretty healthy. I usually have Maple & Brown Sugar Oatmeal with some crushed almonds in the morning. Along with my cup of coffee & a banana and that usually keeps me satisfied for a while. You can also top it with Bananas or Berries of your choice, and it'll just add more flavor!
3. Hard Boiled Eggs with Avocado Toast
Make Guacamole the night before and store in an airtight container to avoid any browning. In the morning, smear it on some toast, and add a hardboiled egg, o an egg of your choice for some protein. Top it off with some chili flakes and spinach for some added heat and flavor.
Super easy, and definitely packed with lots of flavor that will keep you satisfied for a long while!
4. Bagel, Light Cream Cheese, & Smoked Salmon
There's nothing easier than a Bagel, but without protein you're just eating a bunch of carbs, that'll probably lead you to being hungry quicker than you thought. If you're a fan of fish, throw on some smoked salmon. It's light and the smokey flavor elevates the bagel! The protein keeps you satisfied longer too. And all you have to do is buy it from your local super market, and thaw it in the fridge. Eat the salmon based on the directions on the packaging.
